Assessment of Quality and Safety Criteria of Raw Milk Samples from Different Dairy Farms

Ten dairy farms supplying raw milk to the industry were investigated determine compliance with safety criteria (plate count at 30 °C and somatic cell count) of Regulation (EC) 853/2004. The relationship such lipid protein percentages was also evaluated. results demonstrated a great variability due different management systems each farm, regard milking hygiene, health status animals, prevention measures against mastitis. Moreover, in some farms, counts positively correlated quality components as well plate °C.
